Preparation
- Cook your noodles: Bring a pot of water to a boil and cook your noodles according to the package instructions. Once done, drain and set them aside.
- Heat the oil: In a large skillet or wok, warm the vegetable oil over medium-high heat until shimmering.
- Brown the beef: Add the ground beef to the skillet. Let it cook undisturbed for a few minutes to achieve a lovely brown color, then start breaking it apart with a spatula.
- Add garlic and ginger: Toss in the minced garlic and grated ginger. Cook for about a minute until those beautiful aromas fill your kitchen.
- Create the sauce: In a small bowl, mix together the soy sauce, sugar, and chili sauce if you're bringing the heat.
- Combine: Pour the sauce over the beef mixture and stir well to coat everything evenly.
- Mix in the noodles: Add the cooked noodles to the skillet, tossing everything together until the noodles are generously coated in that glossy sauce.
- Serve: Plate up your noodles hot, and don’t forget to sprinkle those vibrant chopped green onions on top.

Notes
Best enjoyed with a light side salad or homemade spring rolls. Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat with a splash of water or extra soy sauce to keep them moist.
