  • 1 pound ground chicken (or beef) Ground turkey or plant-based ground meat can be used for a healthier option.
  • 1 can black beans Drained and rinsed.
  • 1 cup corn Drained.
  • 1 cup diced tomatoes
  • 1 packet taco seasoning Use a gluten-free option for gluten-free recipes.
  • 1 cup shredded cheese Use your favorite type of cheese.
  • Chopped lettuce For topping.
  • Sour cream For topping.
  • Salsa For topping.
  • Chopped cilantro (optional) For garnish.

Preparation
  1. In a large skillet, cook the ground chicken (or beef) until browned. Drain excess fat.
  2. Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir well and cook for about 5 minutes until heated through.
  3. In a bowl, layer cooked rice, the meat mixture, and top with shredded cheese, lettuce, sour cream, salsa, and cilantro if desired.
