Preparation
  1. Start by cooking the rice according to the package instructions.
  2. While the rice is simmering, brown the ground beef or chicken in a skillet over medium heat, breaking it up as it cooks.
Cooking
  1. Stir in the taco seasoning, diced tomatoes, black beans, and corn into the skillet.
  2. Cook everything together until heated through and flavors meld.
Assembly
  1. In bowls, layer a scoop of rice followed by the savory meat mixture.
  2. Sprinkle cheese on top, letting some melt into the warm ingredients.
  3. Finish with a heap of lettuce, a dollop of sour cream, and a swirl of salsa.
