  • 8 ounces pasta (fusilli or penne) Cook according to package instructions
  • 1 cup cherry tomatoes, halved Adds sweetness

  • 1/2 cup bell peppers, diced Add color and sweetness

Dressing

Method
 

Preparation
  1. Cook the pasta according to package instructions until al dente. Drain it well, then set it aside to cool.
  2. In a large mixing bowl, combine the cooled pasta with cherry tomatoes, diced cucumber, red onion, bell peppers, and chopped parsley.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.
Combine
  1. Pour the dressing over the pasta mixture and give it a good toss to ensure everything is well-coated.
  2. Chill the salad in the refrigerator for at least 30 minutes before serving to let those flavors meld together beautifully.
