  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup diced red onion
  • 1 medium avocado, diced Add just before serving to avoid browning.
  • 1/4 cup cilantro, chopped For garnish.
  • 1 medium lime, juiced Add zest for extra flavor.

Preparation
  1. In a large bowl, combine the shredded chicken, grilled corn, cooked rice or quinoa, black beans, cherry tomatoes, diced red onion, and avocado.
  2. Drizzle with the zesty lime juice and gently toss everything together until well mixed.
  3. Season with salt and pepper to taste.
  4. Garnish with freshly chopped cilantro.
