Ingredients
  

Casserole Base
  • 1 lb ground beef
  • 1 can (10.5 oz) cream of mushroom soup Can be substituted with cream of chicken soup
  • ½ cup sour cream
  • 1 small onion, diced
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (32 oz) frozen tater tots
  • to taste salt and pepper
Optional Seasonings
  • to taste garlic powder
  • to taste paprika

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium skillet over medium heat, brown the ground beef and add diced onions. Cook until tender and translucent, then season with salt, pepper, and optional spices. Drain any excess fat.
  3. Stir in the cream of mushroom soup and sour cream until smooth. Keep on heat for a couple of minutes to warm through.
Assembly
  1. Grease a casserole dish and spread the beef mixture evenly across the bottom.
  2. Sprinkle a cup of shredded cheddar cheese over the beef layer.
  3. Arrange the frozen tater tots in a single layer on top of the cheese.
Baking
  1. Bake in the oven for 25-30 minutes, or until the tater tots are golden brown.
  2. Remove from oven and add the remaining cheddar cheese on top. Return to oven for another 5 minutes to melt the cheese.
  3. Let the casserole cool for about 5 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven for 15-20 minutes to maintain crispiness. Can be frozen if baked first.
