  • 1 cup red lentils Rinse before cooking.
  • 1 can coconut milk Use full-fat for creamier soup.
  • 4 cups vegetable broth Homemade or store-bought.
  • 1 unit onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated Can substitute with ground ginger.
  • 1 tablespoon curry powder Adjust for spice preference.
  • 1 tablespoon soy sauce Use tamari for gluten-free.
  • to taste Salt and pepper Adjust to personal preference.
  • for garnish Fresh cilantro Adds freshness.

Method
 

Preparation
  1. In a large pot, heat some oil over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onion becomes translucent, about 5 minutes.
  3. Stir in the curry powder and let it cook for another minute.
Cooking
  1. Add the red lentils, vegetable broth, and coconut milk. Bring the mixture to a boil.
  2. Reduce the heat and let it simmer for about 20-25 minutes until the lentils are tender.
  3. Season with soy sauce, salt, and pepper to taste.
  4. Serve hot, garnished with fresh cilantro.

Notes
