- Add the red lentils, vegetable broth, and coconut milk. Bring the mixture to a boil.
- Reduce the heat and let it simmer for about 20-25 minutes until the lentils are tender.
- Season with soy sauce, salt, and pepper to taste.
- Serve hot, garnished with fresh cilantro.
