Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the shredded chicken with half of the enchilada sauce and season with salt and pepper.
- Fill each tortilla with the chicken mixture and a sprinkle of cheese, then roll them up tightly.
- Place the rolled tortillas seam-side down in a baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
Cooking
- Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
- Garnish with sour cream and cilantro if desired, then serve warm.
Notes
For added nutrition, feel free to include bell peppers or onions in the filling. You can also make a vegetarian version using black beans or your favorite vegetables.
