  • 2 cups shredded cooked chicken Use leftover or rotisserie chicken for convenience.
  • 1 cup shredded cheese (cheddar or Mexican blend) Feel free to experiment with different types of cheese.
  • 1 can enchilada sauce Store-bought works perfectly.
  • 8 pieces corn or flour tortillas Choose according to your preference.
  • 1/2 cup sour cream Optional, for serving.
  • 1/4 cup chopped fresh cilantro Optional, for garnish.
  • to taste salt and pepper Season according to your taste.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken with half of the enchilada sauce and season with salt and pepper.
  3. Fill each tortilla with the chicken mixture and a sprinkle of cheese, then roll them up tightly.
  4. Place the rolled tortillas seam-side down in a baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
Cooking
  1. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
  2. Garnish with sour cream and cilantro if desired, then serve warm.

Notes
