Ingredients

Burrito Filling
  • 1 lb ground beef Can substitute with ground turkey or a plant-based option.
  • 1 cup cooked rice Use pre-cooked rice for convenience.
  • 1 can black beans, drained and rinsed Can substitute with pinto beans.
  • 1 cup shredded cheese Use cheddar or Mexican blend.
  • 2 large flour tortillas
Toppings
  • 1/2 cup guacamole
  • 1/2 cup sour cream
  • 1 cup pico de gallo
Spices
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • to taste tsp salt
  • to taste tsp pepper

Method

Cooking the Beef
  1. In a skillet, warm over medium heat and add the ground beef. Cook until it’s browned, breaking it apart with a spatula as it cooks. Once done, drain the excess fat.
  2. Sprinkle in the spices—cumin, chili powder, garlic powder, salt, and pepper. Stir to combine and let those flavors meld together.
Combining Ingredients
  1. In a large bowl, mix the seasoned beef with cooked rice, drained black beans, and shredded cheese. Ensure everything is evenly combined.
Assembling the Burritos
  1. Take your flour tortillas and lay them flat on a clean surface. Divide the beef mixture between the two tortillas.
  2. Fold in the sides and roll the burritos up tightly, making sure to tuck in the filling as you go to prevent any spillage.
  3. If you’d like, heat a skillet over medium heat and grill the burritos seam side down until they are golden brown and slightly crispy.
Serving Suggestions
  1. Serve the burritos topped with a dollop of guacamole, a generous spoonful of sour cream, and a sprinkle of fresh pico de gallo.
