  • 1.25 cups vegetable broth Use vegetable or chicken broth as per preference.
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 0.25 cup red onion, finely chopped
  • 0.25 cup fresh parsley, chopped
  • 0.25 cup feta cheese, crumbled Adds a tangy flavor.
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice Can use bottled if short on time.
  • Salt and pepper to taste

Method
 

Preparation
  1. Bring the vegetable broth to a boil in a saucepan.
  2. Add the couscous, remove from heat, and cover. Let it rest for about 5 minutes before fluffing it with a fork.
  3. In a large bowl, mix together the cherry tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese.
  4. In another small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well blended.
  5. Combine the couscous with the vegetable mixture, then drizzle the dressing over. Gently toss to bring it all together.
  6. Serve chilled or at room temperature.
