Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef along with the diced onion until the meat is fully cooked and the onions are tender. Drain any excess fat.
- Stir in the taco seasoning and salsa (or Rotel), mixing well. Let it simmer for a few minutes to meld those flavors.
Layering and Baking
- In a large casserole dish, layer half of the tortilla chips at the bottom.
- Spoon half of the beef mixture evenly over the chips, followed by a generous sprinkle of cheese.
- Repeat the layers: more chips, more beef, and more cheese until everything is used up.
- Pop the casserole in the oven and bake for about 20-25 minutes until the cheese is melted and bubbly.
- Remove from the oven and let it cool slightly before serving.
