  • 1 medium Onion, diced Provides flavor depth.
  • 1 packet Taco Seasoning Use your favorite brand or make your own.
  • 1 cup Salsa or Rotel Adds moisture and zest.
  • 10 oz Tortilla Chips or Corn Chips Use sturdy chips that hold up well.
  • 2 cups Shredded Cheese Cheddar, Monterey Jack, or your preferred blend.
  • 1 cup Sour Cream For topping.
  • 2 cups Fresh Lettuce, shredded Adds a crisp freshness.
  • 1 cup Diced Tomatoes Bursting with juiciness.
  • 1 medium Jalapeño, sliced or diced Adjust spice to your liking.
  • 1 medium Avocado, sliced Optional but adds creaminess.
  • 1/2 cup Olives, black or green Optional for added flavor.
  • 1/4 cup Green Onions, chopped For garnish.
  • Hot Sauce, to taste Add if you like it fiery.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef along with the diced onion until the meat is fully cooked and the onions are tender. Drain any excess fat.
  3. Stir in the taco seasoning and salsa (or Rotel), mixing well. Let it simmer for a few minutes to meld those flavors.
Layering and Baking
  1. In a large casserole dish, layer half of the tortilla chips at the bottom.
  2. Spoon half of the beef mixture evenly over the chips, followed by a generous sprinkle of cheese.
  3. Repeat the layers: more chips, more beef, and more cheese until everything is used up.
  4. Pop the casserole in the oven and bake for about 20-25 minutes until the cheese is melted and bubbly.
  5. Remove from the oven and let it cool slightly before serving.

Notes
