  • 1 can white beans, drained and rinsed Can substitute with chickpeas.
  • 1 cup mushrooms, sliced Shiitake or cremini mushrooms can be used.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon thyme Can substitute with Italian herbs.
  • to taste Salt and pepper
  • Fresh parsley for garnish

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat. Once shimmering, toss in the chopped onion and minced garlic. Sauté until the onion turns translucent and fragrant—this usually takes about 3-5 minutes.
  2. Add the sliced mushrooms and let them cook, stirring occasionally, until they’re tender and just starting to brown.
  3. Stir in the drained white beans, vegetable broth, thyme, salt, and pepper. Bring this comforting mixture to a gentle boil.
  4. Reduce the heat and allow it to simmer away for 15 to 20 minutes, stirring occasionally. The goal here is to meld those beautiful flavors together.
  5. Before serving, taste and adjust seasoning as needed. Ladle hot stew into bowls and garnish with fresh parsley.
