  • 12 pieces lasagna noodles
  • 2 cups cooked shredded chicken You can substitute rotisserie chicken.
  • 1 cup cream cheese Can be replaced with ricotta or cottage cheese.
  • 2 cups mozzarella cheese, shredded
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped Can be substituted with another leafy green like kale.
  • 3 cups white sauce (Alfredo sauce) Homemade Alfredo sauce adds freshness.
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions, drain, and set them aside.
  3. In a mixing bowl, combine cream cheese, shredded chicken, chopped spinach, garlic powder, Italian seasoning, salt, and pepper until well blended.
  4. Spread a thin layer of white sauce in the bottom of a greased 9x13-inch baking dish.
Layering
  1. Lay 4 lasagna noodles over the sauce, followed by half of the chicken mixture and a third of both mozzarella and Parmesan cheese.
  2. Repeat layering with more noodles, chicken mixture, and cheese.
  3. Finish with a final layer of noodles and pour the remaining white sauce over the top.
  4. Sprinkle the remaining mozzarella and Parmesan cheese on top.
Baking
  1. Cover the dish with foil and bake for 25-30 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  3. Allow the lasagna to cool for a few minutes before serving.

Notes

Pairs well with a side salad, garlic bread, or roasted vegetables. For vegetarian options, substitute chicken with roasted mushrooms or butternut squash.
