Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, beat the eggs until fluffy.
- Add the Greek yogurt and melted butter or coconut oil to the eggs and mix well.
- In another bowl, combine the baking powder, salt, xanthan gum or psyllium husk powder, and almond flour.
- Gradually add the dry ingredients to the wet mixture, stirring until well combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for about 30-35 minutes, or until the top is golden and a toothpick comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
