  • 6 large large eggs
  • 0.5 cup full-fat Greek yogurt (unsweetened and plain)
  • 1 tablespoon baking powder
  • 0.25 cup melted butter or coconut oil
  • 0.25 teaspoon salt
  • 0.5 teaspoon xanthan gum or psyllium husk powder
  • 0.5 cup finely ground almond flour (optional) Finely ground for best texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, beat the eggs until fluffy.
  3. Add the Greek yogurt and melted butter or coconut oil to the eggs and mix well.
  4. In another bowl, combine the baking powder, salt, xanthan gum or psyllium husk powder, and almond flour.
  5. Gradually add the dry ingredients to the wet mixture, stirring until well combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for about 30-35 minutes, or until the top is golden and a toothpick comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
