Vegetables
  • 2 medium zucchinis, sliced
  • 1 bell pepper, chopped
  • 1 carrot, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
Seasonings and Oils
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Cheese and Garnish
  • 1/2 cup grated Parmesan cheese (optional) For added flavor
  • 1/4 cup fresh basil, chopped For garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced zucchini, chopped bell pepper, chopped carrot, chopped onion, minced garlic, and halved cherry tomatoes.
  3. Drizzle with olive oil and sprinkle with oregano, salt, and black pepper. Toss the vegetables gently to coat them evenly.
  4. Transfer the veggie mixture to a baking dish and spread it out evenly.
  5. If using, sprinkle Parmesan cheese on top for a savory touch.
Baking
  1. Bake in the preheated oven for about 25-30 minutes until the vegetables are tender and slightly golden.
  2. Remove from the oven and garnish with fresh basil before serving.
